It is possible that many people still do not know its meaning or its contribution to the aging process of wine.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The lees are yeasts that acquire their relevance in the wine <\/span><b>fermentation phase<\/b><span style=\"font-weight: 400;\">. This single-celled fungus that produces enzymes capable of causing alcoholic fermentation, is found everywhere, from the vineyard to the barrels or tanks.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">When the yeasts have already fulfilled their activity and die, they decompose. This process is what we call <\/span><a href=\"https:\/\/es.wikipedia.org\/wiki\/Autolisis\" target=\"_blank\" rel=\"noopener noreferrer\"><b>autolysis<\/b><\/a><span style=\"font-weight: 400;\">. In its decomposition, some compounds accumulate in the bottom of the tanks or barrels, improving the characteristics of the wine.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Among other things, the lees add <\/span><b>intensity and stability<\/b><span style=\"font-weight: 400;\"> to the wine, which translates into <\/span><b>less astringency<\/b><span style=\"font-weight: 400;\">, which is that feeling of dryness in the mouth, and <\/span><b>less probability of oxidation<\/b><span style=\"font-weight: 400;\">, since the lees consume oxygen.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">For this transformation to provide the expected results, the content must be <\/span><b>periodically removed<\/b><span style=\"font-weight: 400;\"> in order to homogenize the components of all the wine, and prevent the lees from remaining at the bottom of the barrel, bottle, or glass.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In our Bodegas Copaboca, we have an example of an exceptional wine aged on lees:<\/span><a href=\"https:\/\/copaboca.com\/tienda\/vinos\/juan-galindo-lias\/\" target=\"_blank\" rel=\"noopener noreferrer\"><b> Juan Galindo L\u00edas<\/b><\/a><span style=\"font-weight: 400;\">.
